Dietary Manager/Function Coordinator
Cathy Baxter has worked in the food service field for 36 years. Cathy’s experience has ranged from pizza parlors to pubs to resorts. Prior to coming to Pleasant View Retirement, Cathy was the Banquet Manager at the Margate Resort on Lake Winnipesaukee, where she coordinated weddings, business meetings, political events, and many NASCAR parties. During her tenure there, Cathy coordinated functions for three Governors of New Hampshire, Barbara Bush, Dan Quail, Paul Newman, John Denver, Tom Cruise, and Sally Struthers.

A former student of photography, Cathy owned and operated her own photo developing store in Laconia, and now enjoys “capturing the moment” with her camera at Pleasant View Retirement. Many of the photos you see on our website are the result of Cathy’s efforts.
